Some shortcuts work the same across many Office applications, including OneNote.

Shift+F3 – To toggle case for your selected text (i.e., selecting UPPERCASE, lowercase or Title Case), use Shift+F3.

Ctrl+Shift+P – Bring up the Font Dialog Box with Ctrl+Shift+P. This will allow you to choose color and font type options, as well as subscript, superscript and strikethrough, without having to hunt for multiple buttons on the ribbon.

Ctrl+Space – Has someone been messing with the fonts in your PowerPoint presentation? Easily remove manually applied character formatting by hitting Ctrl+Space.
